This cornbread is delicious. Like really, really delicious (However, the Kodiak Cake mix makes a cornbread that definitely needs to be heated before eating if you’re not eating it right away!). The Kodiak Cake mix gives these lots of protein, so it will keep you full for much longer than regular cornbread, with just as good of flavor!

Prep time: 10 minutes
Cook time: 25-27 minutes
Total time: 35-37 minutes
Yields: 12 muffins

Ingredients:

Kodiak cornbread mix
3 eggs
2/3 cup melted butter
2 cups milk of choice (I use unsweetened almond milk)
2 cups shredded cheddar cheese
2 Tbsp dried rosemary

Directions:

1) Preheat oven to 400.

2) Mix all ingredients and place in greased muffin tin.

3) Bake for 25-27 min. Remove from oven.

4) Enjoy! Like I said above, these muffins are best when warm, so if you’re not eating them right away, heat up before eating.
