Sweet Potato Black Bean Tacos

Total time: 10-20 minutes
Yields: 2 tacos

Ingredients (for two tacos):

2 6” tortillas
1/4 cup chopped sweet potato
1/4 cup black beans
1/8 cup sliced mushrooms
Oil of your choice
Dash of cumin
Dash of paprika

Optional toppings: Avocado, salsa (I always use tomatillo salsa for this recipe, it adds great flavor!), cilantro, jalapeño

Directions:

Heat oil of your choice on stove over medium heat (just enough to coat pan). Add sweet potato, cumin, and paprika and stir for 2 min, then add mushroom. Stir for another 2 min. Make sure the sweet potato is cooked through, then stir in black beans to heat. Warm tortillas, add mixture and eat!
