Glazed Lemon Poppyseed Muffins

This recipe was created after trying to make a healthier version of lemon poppyseed muffins, which turned out HORRIBLE. They were dry, had no flavor, and just weren’t even worth trying to recover. But of course, after baking all day and trying to make a recipe for them, I was just craving a good lemon poppyseed muffin. So, I figured I would try to create an extra delicious lemon poppyseed muffin, without “healthifying” anything and they are damn good. They’re filled with lemon flavor and have the perfect balance of poppyseeds. The lemon glaze on top is the perfect touch.

What ingredients do I need to make this recipe?

  • All-purpose flour

  • Poppyseeds

  • Granulated sugar

  • Baking powder

  • Baking soda

  • Butter

  • Eggs

  • Nonfat plain greek yogurt

  • Milk of choice

  • Lemon juice

  • Vanilla

  • Lemon

  • Powdered sugar

What kind of milk should I use?

It doesn’t matter! I use almond milk, but you can use whatever milk you have on hand (cow’s milk, oat milk, soy milk, etc).

Lemon Poppyseed Muffins

These muffins are filled with lemon flavor and have the perfect balance of poppyseeds. The lemon glaze on top is the perfect touch!

Ingredients

For Muffins
  • 2 cups all-purpose flour
  • 2 tbsp poppyseeds
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup (1 stick) salted butter, softened
  • 2 eggs
  • 1/2 cup nonfat plain greek yogurt
  • 1/4 cup milk of choice (I use unsweetened almond milk)
  • 2 tbsp lemon juice
  • 1 1/2 tsp vanilla
  • Zest of 1 lemon
For Glaze
  • 1/2 cup packed powdered sugar (add more to make thicker)
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 375 F
  2. In a bowl, sift together the flour, poppyseeds, sugar, baking powder, and baking soda.
  3. In a separate bowl, mix together the butter, eggs, yogurt, milk, lemon juice, lemon zest, and vanilla.
  4. Slowly mix the flour mixture into the butter mixture, and mix slowly until completely blended.
  5. Pour mixture evenly into a 12 muffin tin.
  6. Bake for 15-20 minutes, until you can insert a toothpick and it comes out clean.
  7. Pull out the muffins and let cool.
  8. While muffins are cooling, mix together the powdered sugar and lemon juice for the glaze.
  9. Once muffins are cool, drizzle the glaze over the tops of the muffins. Add as much as you want and enjoy!
