Chai Sugar Cookies

These chai sugar cookies are soft, chewy, and have the perfect amount of chai spice. Seriously, these went quick at my house (and there’s only two of us). Don’t skip rolling the dough in the chai sugar, and don’t forget to leave a review!

What ingredients do I need to make this?

  • Flour

  • Granulated sugar

  • Light brown sugar

  • Chai spice mix (homemade or store bought)

  • Baking powder

  • Salt

  • Baking soda

  • Unsalted butter

  • Eggs

  • Vanilla extract

What is chai?

Chai is a tea made from black tea and a mixture of herbs and spices. The most popular spices to make chai with are cardamom, cinnamon, fennel, black pepper and cloves. However, there are different variations of chai that include different spices. My homemade chai spice mix includes cinnamon, ginger, cardamom, pepper, nutmeg, and cloves. Some stores carry chai spice mix, or you can order it online, but I prefer to make my own! Find other recipes that include chai spice mix here!

Do I need to use unsalted butter?

I’ve never made these cookies with salted butter, but honestly I make all my other cookies with salted and unsalted butter interchangeably and don’t see a difference. I think they would still turn out great but can’t vouch for it!

Chai Sugar Cookies

These sugar cookies have the perfect amount of chai spice and are coated in a chai-sugar coating!

Ingredients

  • 2 3/4 cups flour
  • 1 1/4 cup granulated sugar (set aside the 1/4 cup of sugar for later)
  • 1/4 cup light brown sugar
  • 4 tsp chai spice mix, homemade or store bought (separate 2 tsp for later)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 cup unsalted butter (softened)
  • 2 large eggs
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350 F
  2. In a large mixing bowl, sift together the flour, 1 cup of sugar, brown sugar, 2 tsp chai spice, baking powder, salt, and baking soda.
  3. In a separate bowl, mix together the butter, eggs, and vanilla. Mix this slowly into the dry ingredients.
  4. In a small bowl, mix together the remaining 1/4 cup of sugar and 2 tsp chai spice.
  5. Form dough into about 1 1/2 tablespoon sized balls, and roll each in the sugar mixture until thoroughly coated.
  6. Put these on a plate and place in the refrigerator, covered, for at least 1 hour (You can skip this step, but the cookies will flatten out more).
  7. Place the cookies on a baking sheet. Bake for 8-10 minutes.
  8. Remove from oven and enjoy!
