Banana Bread
You can make these as either a bread loaf or as muffins!
Prep time:25-30 minutes
Cook time (muffins): 20-25 minutes
Cook time (bread loaf): 50 minutes
Yields: 12 muffins or 1 bread loaf
Ingredients:
1 1/2 cups whole wheat flour or 2 cups all purpose flour (if using whole wheat, add 4 tsp milk)
1 cup smashed brown bananas
2/3 cup sugar
1/3 cup butter
2 eggs
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt.
Optional: 1/2 cup chopped walnuts
Directions:
Preheat oven to 350. Mix all ingredients and let stand for 20 min. If making muffins, cook for 20-25 min (until cooked through). If making bread, cook for 50 min.
