This mayo-free potato salad is so delicious! The vinaigrette dressing may convert you from mayo-based potato salad for good!

Ingredients

  • 3 lb red potato (cut into about 1" cubes)
  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 1 tbsp dijon
  • 2-4 garlic cloves (minced)
  • 1/4 cup parsley (finely chopped, packed)
  • 1/3 cup green onion (chopped)
  • 3-4 stalks celery (sliced horizontally and thin)
  • Salt and pepper to taste

Instructions

  1. Place potatoes in pot and fill with water (1” of water over potatoes) and bring to a boil and then bring to a simmer and cook 5-8 min. Potatoes are done when you can pierce easily with a fork (do not over cook).
  2. Let potatoes cool.
  3. Mix together all the remaining ingredients except for celery, salt, and pepper to make dressing. Pour over potatoes and coat thoroughly.
  4. Add in celery, salt and pepper to taste.
  5. Serve!
