Apricot Date Bars

I can’t really take the credit for these, they’re an old family recipe that I have only enjoyed more the older I get. They’re perfectly sweet with different textures that compliment each other so well. I really can’t get enough of them, so try them out and don’t forget to leave a review!

  • Shortening

  • Brown sugar

  • All purpose flour

  • Rolled oats

  • Salt

  • Baking soda

  • Dates

  • Dried apricots

  • Granulated sugar

Apricot Date Bars

These delicious bars are filled with apricots, dates, and oats!

Ingredients

  • 3/4 cup shortening (1/2 of this should be butter) - softened
  • 1 cup brown sugar
  • 1 3/4 cups all purpose flour
  • 1 1/2 cup rolled oats
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 cup chopped dates
  • 2 cups mashed dried apricots
  • 1/2 cup granulated sugar

Instructions

  1. Preheat oven to 400 F.
  2. Mix together the shortening and brown sugar.
  3. Stir in the flour, oats, baking soda, and salt to the shortening mixture.
  4. In a saucepan on low heat, mix together the dates, apricots, and sugar (If the dates and apricots are not giving any juices when cooked, I add in about 1 tbsp of water to make the sugar stick). Mix until fully coated with sugar, then remove from heat.
  5. Place 1/2 of oat mixture in a greased 9x13 pan. Press down lightly. Then, spread the apricot mixture over this. Top with the rest of the oat mixture, again pressing down lightly.
  6. Bake for 25-30 minutes, or until golden brown.
  7. Let cool, then cut into bars!
