Cinnamon Almond Granola

Cook time: 20 minutes
Total time: 30 minutes
Yields: 4 cups

Ingredients:

3 cups oats
1 cup chopped almonds
1/2 tsp cinnamon
1/8 tsp salt
1/2 tsp vanilla
1/4 cup avocado oil (or oil of choice)
1/3 cup honey
1/2 cup dried fruit of choice (I usually use craisins or chopped dried apricot)

Directions:

Preheat oven to 350. Mix all dry ingredients except the dry fruit. Then mix in the oil, honey, and vanilla. Bake for about 20 min (until golden brown). Then let cool completely and mix in the dried fruit. I like to make a lot at once and use it throughout the week!
